RASPBERRIES
I was cleaning out the freezer yesterday and found a big bag of frozen raspberries. I will use half of them to create jam and the other half to enjoy over our homemade no-sugar, non-dairy ice-cream that I plan to make for supper. A restricted diet often causes us to become bored with the same old jam recipe. That is what happened this week at our house. I have been making strawberry jam for months and even though it is delicious, it is time for a change.

RASPBERRY JAM/SAUCE

(a great jam for diabetics or special diets) – yields 2 1/2 cups

This jam will keep in the fridge for 3 – 4 weeks, but when I have more than I will need, I freeze some to keep for months or I make a half recipe.

2 cups thawed raspberries (include the berry juice)
1/2 cup Zylitol
1/3 cup chia seeds
With a hand blender mix these together well. Put into the fridge for several hours. Stir with a spoon and then spoon it into jam jars. Refrigerate & enjoy.

Carb count – about 2g carb per tablespoon
This jam is also great on top of no-dairy, no-sugar ice-cream. Ice-cream recipe below!

THICKENED RASPERRIES – yield 2 cups fruit
2 cups raspberries (include the berry juice)
2 tablespoons Zylitol (or 10 drops of stevia)
2 tablespoons cornstarch

Drain the thawed raspberries. Mix the cornstarch & sweetener of choice with the juice. Heat in the microwave 1 minute at a time, until thickened; stirring between until smooth. Stir in the raspberries.
Chill and enjoy as is, as a topping or mixed with other fruit!

Carb count – 11.5g carbs per 1/2 cup thickened raspberries.

YONANAS ICE-CREAM – Delicious no-dairy, no-sugar.
A number of years ago we bought a ice-cream machine called YONANAS. Our family loves the delicious ice-cream it makes in just minutes with just frozen bananas. In fact to make other flavors, all one has to do is use other frozen fruits. We have had guests who were so impressed as to how easy it is to make ice-cream that tastes so good and has so few calories that they went home to see where they could buy one.

Freeze pieces of bananas or as well other fruit. Turn on the machine and push these pieces through one by one using banana pieces only for plain, or banana pieces between other pieces of frozen fruit for other flavors.

RASPERRY SUNDAE – no-dairy, no sugar
As soon as you have made some ice-cream in your YONANAS machine you are ready to enjoy a dish full with the raspberry topping or jam. Enjoy these nutritious, delicious desserts! Winnie
