BEEF VEGETABLE STEW

BEEF VEGETABLE STEW
Serves 6 Make in a crockpot.
1 pound beef (cut into small pieces)
1 cup chopped onion
4 cloves garlic
2 ½ cups bone broth
2 cups chopped carrots*
2 cups chopped potatoes
2 cups cut fresh or frozen green beans
1 teaspoon each of basil
1 teaspoon thyme
1 teaspoon poultry season.
½ cup chopped fresh or frozen celery
1 teaspoon salt
½ teaspoon pepper
2 teaspoons Worcestershire sauce
3 tablespoons cornstarch mixed in ¼ cup of water.

Brown the beef pieces in 2 tablespoons coconut oil. Add the chopped onion & minced garlic and saute.
Put the meat into the crock-pot together with bone broth, carrots, potatoes, beans and celery. Add seasonings & cook on high for 5 hours or 10 hours on medium heat. Stir in the cornstarch/water mixture. Cover and heat 10 more minutes or until thickened.

Now is the time that I get to use all of the vegetables that I canned, stored in dark cool place or froze this summer and I feel so rewarded for having a good sized summer garden.

*To encourage children to eat carrots:
Use a fancy blade to cut. Call them carrot critters
