BLACK BEAN FUDGE CAKE

THE YEAR OF THE PULSE – BLACK BEANS
Black beans are very beneficial for the health of our digestive tract and colon. It helps support the growth of desirable bacteria in the digestive tract.
Black beans can lower the risk of Type 2 diabetes, heart problems and cancer.
Soaking the beans gets rid of the phytates and tannins and reduces flatulence.

The following cake is really delicious and nutritious too! I have made it with 1/2 cup honey and now with palm sugar as well.

OTHER PULSES
Here as well I am now using other soaked and cooked pulses in this recipe. They turn out very well.

BLACK BEAN FUDGE CAKE – makes one 8 by 10 or 9 by 9 inch cake.

1 19 ounce can drained black beans or
2 cups cooked black beans that have been soaked, cooked & drained (throw out liquid – then measure)
3 eggs
3 tablespoons kefir or plain unsweetened yogurt
4 tablespoons avocado oil (or your choice of other healthy oils)
1/3 cup cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1 teaspoon vanilla
1/2 cup palm sugar (or honey)
1/2 cup coarsely chopped walnuts (or other nuts)
1/3 cup chocolate chips
Preheat oven to 350’F.
Lightly oil baking pan.
Combine all ingredients except the nuts and chocolate chips in a blender; blending until smooth. Stir on the walnuts. Pour into the pan. Sprinkle the chocolate chips over the top. Bake until the top is dry and the edges start to pull away from the sides, or about 25 to 30 minutes.
Cool completely. Cut into squares.

TOP WITH HOMEMADE ICE CREAM
We have a small machine that turns frozen chunks of bananas into ice cream. Just a spoon of this is great on this cake & makes a very tasty & special dessert. But the cake is also fine just as it is.
This ice cream really does taste great and is a perfect substitute for all of us who are trying to eat healthier for one reason or another! Winnie
