HARVEST CRUNCH

HARVEST CRUNCH
I always look for healthy munchies for our men while they spend long hours on the field during the harvesting season. Our niece came to visit this week and brought a snack for us to enjoy.

We were all impressed with her snack so I told her I needed the recipe for these coming weeks when the men are taking in the harvest. I didn’t have all of the ingredients she used, but I improvised and I now have 2 batches ready to go into small containers for the lunch pails.

HEMP SEED CRUNCH
I used the healthy seeds that are in my cupboard so I will share both recipes.
2 cups raw shelled pumpkin seeds
1 cup raw shelled sunflower seeds
1/2 cup hemp seeds
1 tablespoon cinnamon
1 teaspoon ginger
1/3 teaspoon salt
1/3 cup maple syrup
2 teaspoons vanilla

Put all of the dry ingredients into a bowl. Add syrup and vanilla and mix well. Spread the mixture on parchment paper on a 11 by 15 inch cookie sheet. Press evenly. I used a dough roller but one can use the back of a spoon too.
Bake for 30 minutes at 325 degrees F. Remove from oven, let cool and break into pieces.

ALMOND CRUNCH
2 cups slivered almonds
1 cup raw shelled sunflower seeds
1/2 cup hemp seeds
1 tablespoon cinnamon
1 teaspoon ginger
1/3 teaspoon salt
1/3 cup maple syrup
2 teaspoons vanilla

Put all of the dry ingredients into a bowl. Add syrup and vanilla and mix well. Spread the mixture on parchment paper on a 11 by 15 inch cookie sheet. Press evenly. I used a dough roller but one can use the back of a spoon too.
Bake for 30 minutes at 325 degrees F. Remove from oven, let cool and break into pieces.

I will be changing these recipes to use other nutritious seed in the coming weeks. You can do the same!

PARKINSONS
These seeds are all beneficial for the brain so are great for all of us, but especially for those who have Parkinson’s.
