CABBAGE ROLLS & FAVA BEANS

Fava Beans contain dopamine which can help our body control tremors. Parkinsons’ patients usually have hand tremors and this bean could be a benefit!

This healthy and delicious recipe is just another way of adding fava beans to a recipe.

Buckwheat is very nutritious so it replaces the rice

CABBAGE ROLLS & FAVE BEANS – 16 – 6 inch rolls

1 1/2 cups dried buckwheat groats

3 cups water

Bring groats and water to a boil. Turn to low, cover and simmer for 20 minutes. Set aside.

1 small head cabbage

Remove discard the core & outside leaves from the cabbage head. Put the head into a pot of boiling water, cover and simmer just enough to soften the outer leaves. Remove them, set aside. Continue to cover and simmer and remove leaves until you have 16 leaves.

I usually shred the inside part that is left and use it in soup or make a cabbage salad with it.

1 cup drained fava beans

1 pound lean beef

Heat the beans so they mash easily. Mash them into the beef.

1 medium onion, chopped fine

3 cloves garlic, minced

2 eggs

Mix together the groats, beef & beans, onion, garlic and eggs.

Add & mix in:

1 tablespoon dried parsley

salt & pepper to taste

Wrap a portion of the mixture into each cabbage leaf. Place side by side in a roaster or baking pan.

Pour over 3 cups of tomato juice or sauce. Cover and bake 2 hours at 325 º F.

After we have eaten our supper, I freeze the remaining rolls on a cookie sheet and then freeze them in a closed plastic bag. That way I can take out 1 or as many as we want to eat at another time.
