CHOCOLATE PUDDING (dairy free, sugar free)

BACK TO DAIRY FREE, SUGAR FREE COOKING! (Delicious as well I will add!)
I have been trying hard to make all of my recipes with healthy fats, no dairy and no regular sugar in, but over the holidays we have attended gatherings and so have eaten some of these no-nos; and enjoyed them too!

Christmas is over and it is time to make some more nutritious recipes now.

I made broth from the turkey carcass yesterday. I made the broth with lots of onion, garlic, celery, carrots with parsley and bay leaves for added flavor. I froze a few cartons for another day but we will have some for dinner today. I even cooked gluten free noodles.

For Christmas Eve supper I made several batches of potato casserole by using my homemade coconut yogurt and coconut milk instead of cream cheese and sour cream; made ahead of time so we could just heat it up an hour before eating.
I had quite a bit left so froze it. I decided to thaw and make potato puffs yesterday. I added a half cup of almond milk and a half cup of coconut yogurt and blended it well. With a large ice cream scoop I scooped out 14 round mounds on to parchment paper, topped with a pinch of parsley flakes and they are in the fridge ready for dinner tomorrow. I will heat them for 20 minutes and serve them with reheated left over turkey gravy on.

Desserts have often been pie, desserts squares or fancy cookies so today I created & just made a healthy version of chocolate pudding. I used almond milk in it as it is what we have in the fridge. You can successfully use other kinds of milk substitutes or even dairy milk if you wish.

DELICIOUS DAIRY FREE, SUGAR FREE CHOCOLATE PUDDING . . . 6 or 7 dishes
1/2 cup almond milk
1/3 cup cornstarch
1/4 cup cocoa
1/4 cup Xylitol
1/4 teaspoon Himalayan salt
2 1/4 cups almond milk
2 eggs
2 teaspoons vanilla
2 tablespoons coconut oil

Heat the half cup milk. Add & mix in the cocoa, salt and Xylitol. Mix in the 2 1/4 cups almond milk. Microwave 3 minutes, stir and mic again until it is thickened. Beat eggs and mix in well. Mic 1 more minute. Stir in vanilla and coconut oil until melted & silky smooth.

Spoon into dishes and allow to cool. This dessert tastes great just as it is, but to make it special top with a little whipping cream (or dairy free topping) and a spoon of fresh or thawed strawberries. Or if you wish, pour the pudding into a pie crust or graham wafer crust. Or use it in a chocolate trifle!
