NUTRITIOUS APPLE NUT MUFFINS

Today I decided to bake nutritious muffins using spelt flour, apples, oat bran and even plenty of cinnamon; all ingredients that can help us fight and sometimes even prevent certain diseases.

I still have apples from our tree & carrots from the garden in bags all stored in the garage for us to use and enjoy in the weeks and months to come. We are enjoying the apple juice we canned so that is what I am using in this recipe. (apple juice with no sugar added)

We have our first snowfall today and it is cold so I want to warm up the house by doing some baking. I have cut the sugar called for in half.
The 2 dozen muffins are now baked & cooling on the counter. I just bit into one as a desert with my tea. Oh . . . are they ever good!
I am really excited with how these muffins turned out, so I am writing up the post first and will then sit down and finish the muffin later with a cup of hot tea.

NUTRITIOUS APPLE NUT MUFFINS – 2 dozen muffins
Heat oven to 350 º F.
½ cup raisins
½ cup apple juice
2 cups freshly ground spelt flour
½ cup sugar
2 teaspoons baking soda
2 tablespoons cinnamon
½ teaspoon sea salt
¾ cup oat bran
2 cups finely shredded carrots
1 cup finely shredded apple
½ cup sliced or chopped almonds (or walnuts)
3 eggs
½ cup cooking oil
2 teaspoons vanilla
½ cup chocolate chips (optional)
Extra slivered almonds to sprinkle on top before baking

Soak the raisins in hot apple juice. When cool, drain off the juice to use later.
In a large mixing bowl mix together dry ingredients. Stir in the carrot, apple, almonds and raisins.

In another bowl beat the eggs well. Then beat in the oil, vanilla and apple juice.
Stir in the dry ingredients just until combined. Stir in the chocolate chips. Spoon the mixture into muffin pans. Put a few almond slivers or chopped pieces on top of each.

Bake at 350 for 20 minutes or until a toothpick comes out clean.
