STEVIA CHOCOLATE COOKIES -makes 33 smaller cookies
Great for a no-sugar no-dairy healthy diet!
Well Melvin has been on this diet for more than 3 weeks now and he is craving cookies. I almost always have quite healthy cookies in the canister on the cupboard and whoever happens to walk into the kitchen will help themselves. But this new diet has got me experimenting so today it is cookies!

I wondered how I could make cookies with stevia. But last week I toyed a little and made the chocolate pudding by using stevia and apple sauce, so today I figured it was time to try to make cookies as well. I would use a small amount of apple sauce with the stevia for a little extra sweetener.

I wasn’t expecting them to be crunchy as we like them, but I would do my best to satisfy Melvin’s cravings. I also decided to make a very small batch maybe using only 1 egg.
He can’t have butter so I will make them with the lactose free margarine I bought for him.

I made one batch of 30 cookies and after tasting them, I tweaked the recipe, added a few ingredients for extra health and came up with the following recipe. I like it!

1/2 cup lactose free margarine
3 teaspoons vanilla
1 egg
1/4 cup unsweetened applesauce
1 teaspoon SweetLeaf stevia powder (1 teaspoon has the sweetness of 8 teaspoons sugar)
1 teaspoon cinnamon
Whip the above ingredients.

1 1/2 cups spelt flour
1/2 teaspoon Himalayan salt
3/4 teaspoon baking powder
Beat in 1/2 cup spelt flour with the salt & baking powder. Beat in the second 1/2 cup. Then add and mix well the final 1/2 cup spelt flour with a spoon.

Stir in the following:
1/4 cup chocolate chips
1/4 cup sunflower seeds
1/4 cup chopped walnuts

Scoop balls of dough and place them on a sheet of parchment paper or a greased cookie sheet. Bake at 350 ยบ F for 20 minutes. Cool on a rack and store in a canister.

I think I may store the canister of these special diet cookies in the freezer and make the usual healthy cookies that I make with palm sugar to keep on the cupboard for those of us who are not on any diet.

Or maybe we all should be cutting out even these healthier sugars?? Winnie
