HERITAGE BREAD

HERITAGE BREAD – yield 7 (1 1/4 pound round loaves)
Heritage Bread recipe is found on page 26 in “EAT MORE WHOLE GRAINS” cookbook. This favorite recipe has been enjoyed by our family & guests for many years.

Today I used this recipe, chose the healthiest ingredients possible, focused on those who cannot have dairy and turned out 7 loaves of delicious bread!

3 cups of warmed hemp milk
2 1/4 cups warmed water
1/2 cup avocado oil
2 tablespoons Himalayan salt
1/2 cup honey
2 tablespoons black strap molasses
1 cup flax ( 3/4 cup crushed and 1/4 cup whole)
1/2 cup sunflower seeds
10 cups spelt flour
4 tablespoons quick rising yeast
5 – 6 cups unbleached flour
sesame seeds, hemp seeds, & or dry oatmeal (to sprinkle in pans before placing the dough loaf on top)

Put all the ingredients except the yeast, unbleached flour and seeds for under the loaves into a large bowl. Mix the ingredients together with a dough hook or by hand. As it kneads, add the yeast and enough unbleached flour to make a firm moist ball. Knead by machine for 9 minutes or by hand until it is well kneaded. If you have a kneading machine such as a Bosch, it is now time to shape into smooth loaves and place it on top of the seeds in pans.
If you are kneading by hand, let the dough rise double, punch down and then proceed to shape loaves & place in pans as mentioned above.
Let rise at least double in size. Bake at 375 ‘ F for 30 minutes or until nicely browned.
