SPROUTED SEEDS ARE NUTRITIOUS!

When seeds are sprouted, the sprouts are more nutritious than the original plants. We are enjoying sprouts this winter! I ordered mung seeds, broccoli seeds and alfalfa seeds from MUMM’S SPROUTING SEEDS in Saskatchewan. I usually have 2 jars sprouting at the same time. If I have to remember to rinse one jar, it may as well be two & we then have a variety on hand in the fridge.

The alfalfa sprouts are ready this morning so I left them sit in the sun for a few hours and the tips turned green. I keep a plastic bag or 2 of sprouts in the fridge to add to all of our salads. Today I am adding them to the pancake/waffle batter.

For lunch today I am making pancakes/waffles. I like waffles and Melvin likes pancakes so we are both happy. The following recipe made 6 waffles and two thick Belgium waffles.

I thawed blueberries and strawberry and mixed in a few drops of stevia to put on top.

SPROUTED SEED WAFFLES/PANCAKES

1 1/2 cups coconut yogurt (The recipe is in the EAT MORE WHOLE GRAINS cookbook update)
2 eggs
1/2 cup alfalfa spouts
2 tablespoons avocado oil
Put the above ingredients into a blender and process for 3 minutes.

1 1/4 cups gluten free flour (I used 1 cup quinoa flour & 1/4 cup cassava flour)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon Himalayan salt
Add the above ingredients to the blender and process until mixed.

Fry in a fry pan in coconut oil or bake in a waffle iron.

Enjoy with fruit on top!
