OUT OF THE FREEZER & TO THE TABLE

Our freezer is still loaded with some of last years vegetables. Every year I have a big garden and we always have enough for the summer and the rest preserved until the next year’s garden is producing.

But then there are always some vegetables that I freeze too many of; like frozen beets, cucumbers, green beans, apple sauce. Due to covid, we stay home alot so I have been spending time trying to use up some of these nutritious preserves.

BEETS TURNED INTO DELICIOUS RELISH

Today I took out 3 (2 cup) packages of beets. One will be to cook & enjoy for dinner with butter salt & pepper.

The other 2-  I cooked to add the juice to my breakfast drink so I will share how I have strained out the juice & used the pulp to make a delicious beet relish.

Beet pulp still has plenty of fibre and many nutrients!

BREAKFAST BEET JUICE

I mentioned often that I don’t add milk to my granola at breakfast so every 2 weeks I make a batch of drink that will be in the fridge to replace milk on cereal. The recipe is on my website. The drink consists of juice from our gardens; apple. chock cherry, nanking cherry and beet juice. So that is why I am taking most of the juice out of the thawed beets.

I had often put the pulp that was left into the compost.  But not today!

Today I figured, enough is enough! Because the result was a huge success, this relish recipe is on the website as well under pickles. Hope you will make some & enjoy it too, but be sure to make use of the juice as well! Winnie
