In the Bible in Genesis 1:29 it says, “And God said, Behold I have given you every plant yielding seed which is upon the face of the earth, and every tree with seeds in it’s fruit; you shall have them for food.”

Over the years many of us have gradually strayed from this ideal way of eating. Today research is pointing us back to preparing our foods by using simple yet healthy seeds and plants.

Living on the farm has given us easy access to seeds of all kinds; some we grow every year on our fields, others I gather from my huge garden and still others I buy from other farmers or organic growers.

For over 40 years we have been able to turn these healthy seeds into many different breads, muffins, cookies and as well use them when making meals. I love to bake bread so I can use whole grain wheat with all of the nutrients in this freshly ground flour, or I can add rye or barley flour. These days I am using spelt flour as we find it easier to digest. The possibilities are endless.

When we want pancakes for lunch & we are in a hurry, we could reach into the cupboard for a not so healthy choice; a pancake mix. I haven’t bought one in years, but when I am in the hurry, what I often do is make BUCKWHEAT BATTER PANCAKES (recipe in EAT MORE WHOLE GRAINS). As long as you have a blender and some buckwheat seeds in the house, in minutes you can turn these seeds into pancakes. They are delicious and nutritious!

If you have a grain mill, you can turn these many healthy seeds (buckwheat, quinoa, oats, barley, rye, or other) into flour and then substitute it for wheat flour)
