AVOCADO DRESSING

AVOCADO DRESSING – store in a 2 cup jar.
There are a few in our family who do not like avocados. You may be facing this yourself, so here are a few recipes I am using that one can hardly believe contain avocados.

I have read so much about the nutritional benefits of avocados so naturally I am hiding them in our meal plans. Below is a new dressing recipe that I created & used in several ways during the past 6 days. It kept well in a covered glass jar in the fridge and today I want to make another batch for this week.

When one opens an avocado, it doesn’t take long for it to turn brown, so I wondered if that would happen to this dressing; but it hasn’t. It remained very tasty and a nice green color for as long as it lasted – 6 days. I will see if it will last longer this week.

AVOCADO DRESSING
Put the following into a deep small bowl.
1 medium size avocado (remove peel and stone)
2 tablespoons lemon juice
1/2 teaspoon Dijon mustard
2 tablespoons melted honey (or use stevia if you want less calories)
1 clove garlic, minced
1/2 teaspoon Himalayan or sea salt
1/4 cup extra-virgin olive oil
Using a hand blender, puree the ingredients until it is really smooth.
Add & mix in 1/2 cup unsweetened orange or apple juice (or your choice of any other unsweetened juice) Store in a covered jar in the fridge.

Drizzle just as much as is needed over the salad greens from a spoon, mix and enjoy!

BROCCOLI CHICKPEA SALAD
Yesterday we went to a buffet dinner and I took this salad along using up the last 1/4 cup of avocado dressing. This salad is delicious and nutritious!

1 1/2 cups coarsely shredded broccoli
1/4 cup cooked chickpeas
1 tablespoon chopped onion
1/4 cup alfalfa or kale sprouts (they can be left whole or chopped)
1/4 cup of the avocado dressing
1 diced tomato
Mix all ingredients together and keep in the fridge until time to serve.

A few weeks ago I shared a delicious chocolate pudding recipe that contains avocados. This week I wanted to make a larger recipe so I changed it a little and we liked it just as must so I will share the changed recipe.

AVOCADO CHOCOLATE PUDDING – 4 dishes
3 small avocados
1/4 cup maple syrup
1/4 cup cocoa
1/3 cup milk
1/2 cup yogurt
2 teaspoons vanilla
pinch of salt
Blend all the ingredients until very smooth. Spoon into dessert dishes & enjoy!
