CRUNCHY COOKIES

OH SO HEALTHY CRUNCHY COOKIES!

1 cup peanut butter

4 cups organic old fashioned oatmeal

2 teaspoons vanilla

4 regular eggs (or 3 large)

1/2 teaspoon Himalayan salt

1 cup lard (natural, unprocessed)

1 1/2 cups coconut palm sugar

Mix the above ingredients until smooth.

1 cup potato starch

1/2 cup tapioca starch

Knead in the starches.

Add & mix in the ingredients below.

1 cup unsweetened fine coconut

1 cup sunflower seeds

1 cup dark chocolate chips

Scoop out small balls of dough and place on a greased cookie sheet. Press each with a fork. Bake for 11 or12 minutes at 350° F.

Lift from the cookie sheet while hot and place on a board to cool.

When cold, store in a cookie canister.
