CRUNCHY COOKIES

OH SO HEALTHY CRUNCHY COOKIES!

1 cup peanut butter

4 cups organic old fashioned oatmeal

2 teaspoons vanilla

3 eggs

1/2 teaspoon Himalayan salt

1 cup butter or lard (natural, unprocessed)

1 cup coconut palm sugar

1 1/2 teaspoons baking soda

1 teaspoon baking powder

Mix the above ingredients until smooth.

1 1/2 cup tapioca starch

Knead in the starch.

Add & mix in the ingredients below.

1 cup chopped walnuts (or other nut of choice)

1 cup roasted shelled sunflower seeds

1/2 cup dark chocolate chips

Scoop out small balls of dough and place on a greased cookie sheet. Press each with a fork. Bake for 12 – 14 minutes at 350° F.

Lift from the cookie sheet while hot and place on a board to cool.

When cold, store in a cookie canister.
