DAD’S OATMEAL COOKIES, GLUTEN FREE

DAD’S GLUTEN FREE OATMEAL COOKIES – 6 dozen

I have been working on my oatmeal cookie recipes seeing how I can make them crunchy, healthy, gluten free and really tasty!

I finally came up with a recipe we really like, it’s crunchy, gluten free & uses coconut palm sugar in a lesser amount. I will put this recipe in place of one that is in my website, calling it DAD’S GLUTEN FREE OATMEAL COOKIES. Hope you like it too!

1 cup butter

1 cup coconut sugar

2 eggs

2 tablespoons water

1 tablespoon vanilla

2 cups buckwheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

3 cups oatmeal

1 1/2 cups fine unsweetened coconut

1/2 cup chocolate chips (or raisins)

1 cup roasted sunflower seeds

Cream the wet ingredients together, then knead in the remaining ingredients. Scoop the dough with a medium size scoop. Place balls on a greased cookie sheet. Bake about 12 – 14 minutes at 350º F. or until nice and golden brown. When they are dark enough they are quite crunchy, but when I bake them light in color for me they are not as hard as I would like them.

Cool and pack into cookie tins.
