DELICIOUS SPELT WAFFLES

HEALTHY WAFFLES OR PANCAKES – 15 large Belgium Waffles
I make this large recipe to serve as many as we need and then freeze the rest to thaw & reheat in the waffle iron another time. It just takes about 40 seconds to reheat. They taste just as good as when they are freshly made.
TYPE 1 DIABETES
Our granddaughter who has type 1 diabetes was over the other day for lunch. I decided to use most of the ingredients that are in the bread that I bake for her to have a slice every day. We weighed the waffle and she knew she could have 1 1/4 waffles with 1 tablespoon of maple syrup a glass of milk and a fruit. She asked me to send her mom the recipe as she really liked them.

PROSTATE CANCER TREATMENT
Melvin was still having radiation treatments so this recipe was also okay for his diet. The spelt wheat is milled very fine and did not cause any changes in his digestive system or interfere with the treatments at all. We were so thankful as otherwise he would have had to eat white flour products. We all know that when flour is milled in large mills, it is most often stripped of all the nutrition and then bleached with a toxic chemical. I will share more on this in a post on my blog.

5 1/2 cups spelt flour
1 cup unbleached flour (or use another cup spelt flout)
1 teaspoon salt
2 teaspoons baking soda
3 teaspoons baking powder
Mix all the above dry ingredients together.

4 cups plain yogurt or buttermilk
4 eggs
1/4 cup avocado oil
Beat together and then mix with the dry ingredients.
Bake in waffle iron or as pancakes.

TOPPING:
I enjoy these waffles with yogurt and fresh fruit on top, but ice cream with maple syrup is also great.
Yesterday we had them with sausages and cottage cheese & they were yummy too!.
