GARDEN’S BEST BEEF STEW

GARDEN’S BEST BEEF STEW– serves 6

Preparing the meat:

I partially thawed a pound of stewing beef & then sliced it into smaller pieces.

Put into the insta-pot:

2 cups water

1 onion, chopped

4 cloves garlic, minced

3 bay leaves

beef pieces

Set the insta-pot to “meat” button & cook for 20 minutes according to directions with your inst-pot. The meat was nicely done at this time.

I strained out the meat & onions to add later on to the pot when the vegetables are done. Throw away the bay leaves. In a pot I then cooked the following vegetables in the 2 cups meat juice until done:

2 cups diced potatoes

1 cup diced carrots

1/2 cup diced parsnips

1 cup green beans

Add:

chopped cooked beef & onions

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

3 tablespoons ketchup

Salt & pepper to taste

Thicken the gravy with 4 tablespoons cornstarch mixed in a half cup water until smooth.

You may wish to add other herbs of choice to your stew for flavoring.                 Winnie
