GLUTEN FREE LIGHT COLORED PANCAKES

GLUTEN FREE LIGHT COLORED PANCAKES – 2 dozen pancakes or 7-8 Belgium Waffle.
I call them light because some family members look at the dark colored results and think, “HEALTHY” and they would rather have something not as healthy. So it is great to have them look like they are made with white flour but yet really healthy! Just one of my fooling tactics when I need to!
Put all these ingredients into a bowl.
2 eggs
2 cups hemp milk (or milk of choice)
1/4 cup avocado oil
2 1/2 cups buckwheat flour (milled buckwheat groats)
1 teaspoon Himalayan salt
4 tablespoons baking powder
2 tablespoons sugar substitute (stevia, Krisda, monk sugar or other)
Blend until smooth. Bake on a greased griddle or bake in a waffle iron.

WE enjoyed these with maple syrup, cottage cheese, strawberries and blueberries.

COTTAGE CHEESE
We used to buy creamed cottage cheese but always felt there was so much thin liquid with the cheese curds.
Now I buy dry cottage cheese & add enough of my homemade coconut yogurt as liquid. The yogurt is a healthy bacteria so it is a healthier choice, but as well you get more creamed cottage cheese.

BUCKWHEAT FLOUR
I also use this flour to thicken gravy or other sauces instead of using white flour. Winnie
