HAM HASH BROWN CASSEROLE for 40 – April 15/16
3 large pans (10 X 16) plus a small casserole

Last month we served a group of 40 seniors the following casserole.

5 1/2 pound shank ham
5 kg hash browns (I bought 2 – (2 1/2 kg) bags and used all except for 2 pounds)
5 cans mushroom soup
1 kg cheddar cheese, shredded
1 large onion, chopped fine
2 tablespoons mustard
1 kg 14% sour cream
1 kg 2% cottage cheese (I pureed this in blender)

16 – 18 cups of diced cooked ham.

Mix all of these ingredients together. Spread into 3 large baking pans. (10 by 16) As well I had a small casserole left so made that too.
I blended 1 box corn flakes (700 ml) and spread that on top. Covered with foil and baked for 1 and 1/4 hours at 350 ‘F. Removed foil and baked another 15 minutes.

HINT FOR A HEALTHIER CHOICE
They say one should use whole milk products as the less-fat products have lots of sugar added.
For a healthier meal, next time instead of the 14% sour cream and cottage cheese, I would buy 2 (750 ml) dry whole cottage cheese and add 2 cups milk (or better yet kefir) and blend until smooth.

Served with carrot salads and pull apart loaves.
