EASY HEALTHY LASAGNA – serve 4
This is a Dairy-Free & Gluten-Free recipe I made and served yesterday. I added fava beans to give us that extra dopamine for our health It was & is a winner!
Our store sells all kinds of gluten-free pasta. I use witch ever variety we have in the cupboard.
I buy DAIYA dairy-free cheeses; either cheddar for this recipe or a cream style that is dairy-free that I use to replace dairy cream cheese!
3/4 pound lean ground beef
1 medium onion, chopped fine
1 cup mashed cooked & drained fava beans
2 cloves garlic, minced
2 teaspoons ground oregano
1 1/2 cups tomato sauce
4 cups cooked gluten free noodles or macaroni (2 cups raw)
1 1/2 cup dairy-free shredded cheddar cheese
Brown beef. Add and saute with onion & garlic. Add the oregano, tomato sauce, cooked noodles, salt & pepper to taste.
Stir in 1 cup of the shredded cheese. Spread into an 8 by 10 inch Pyrex baking pan. Sprinkle 1/2 cup cheese on top. Cover and bake for 40 minutes at 325 º F. Remove from oven and enjoy with a salad.
Melvin enjoys it with a slice of sour dough bread!
