LAZY CABBAGE DINNER

LAZY CABBAGE DINNER – serves 4 -5

1 tablespoon coconut oil

1medium size onion, chopped

4 cloves garlic, minced

2 cups lean ground beef

2 cups shredded cabbage

1 cup coarsely shredded carrots

1 1/2 cups tomato juice

1 teaspoon salt

1/4 teaspoon pepper

2 cups cooked millet

Melt coconut oil, add onion, garlic & ground beef. Cook on medium heat until beef is done. Add cabbage, carrots, salt & pepper. Pour over tomato juice and simmer until vegetables are done. Add, mix in millet, heat through and serve.
