POTATO PANCAKES . . . QUICK & EASY!

I dug a row of potatoes in the garden this afternoon so decided we would have potato pancakes for supper. There are always a few potatoes that get poked with the fork, or cut with the spade so I used those.

It took only 15 minutes to wash & clean up the unpeeled potatoes, dice & blend them,

We were just the two of us, so this smaller recipe was just right.

2 eggs
1/4 cup wheat germ*
1/2 teaspoon salt
1/2 teaspoon baking powder
1 small onion – chopped up
3 cups diced potatoes
In a blender process all of the ingredients except the potatoes. Add the diced potatoes and blend only until mixed and chopped coarsely. Turn fry pan on high to start. Add 1 teaspoon of coconut oil. When the oil is melted, turn down the heat to medium, and add 3 (4 inch) circles of batter. Brown nicely. Turn and brown the other side as well. Continue with the remaining batter.

These are very tasty & nutritious served with cottage cheese on top, but some of our kids will only eat them with syrup. The recipe yields 12 pancakes
* Other times when I made this recipe I used quinoa flour or oatmeal flour instead of the wheat germ and they were really good as well.
