In my blog last week I mentioned that Melvin has prostate cancer and had to eliminate a good number of healthy foods.   When I looked at what he could eat, I knew that a diet without fibre would not be for him. We had included fibre in our diet for all of our married lives. So the nurse we saw said we should go ahead and eat whole grain flours, but be careful to mill these grains well and see what would happen.
WHOLE WHEAT BREAD – I now bake by milling the spelt wheat really fine. Bought whole wheat bread can have whole seeds in; which they didn’t want. I bake all of the bread we eat and make sure it is milled fine.
FLAX – Melvin is done 14 treatments now and we have had oatmeal with finely crushed flax on every day so far as well as whole grain flour bread. It hasn’t been a problem with his treatments and he can continue to have these healthy seeds. This way he is not plugged up and can have a bowel movement each day before we leave for the treatment. Perfect!
Here is a great recipe that we enjoy that has only flax flour in. I just make it with ingredients Melvin can have.

1/4 cup crushed flax
1 tablespoon avocado oil
1 egg
1/2 tablespoon honey – 8.65g carbs
1 teaspoon baking soda
1/4 teaspoon vanilla
1 tablespoon cocoa
2 teaspoons cinnamon
3 tablespoons chocolate chips
This muffin is baked in one of those big rounded micro-wave safe mugs. (4 1/2 inches in diameter)
Put the dry ingredients into the ungreased mug and mix. Add the wet ingredients except chocolate chips. Mix well. Stir in the chocolate chips ever so slightly. I try to space them so they won’t end up being all in one area or at the bottom of the muffin.
Microwave for 90 second.
Dump out to a dish when hot.
