This porridge includes coconut oil, a healthy fat together with Quinoa, a protein & a great way to start the day.

QUINOA PORRIDGE – 8 (1/2 cup) servings

1 cup washed quinoa seeds

2 cups unsweetened coconut milk (or your choice of dairy or other)

1 tablespoon coconut oil

Bring the above to a boil, cover and simmer 15 minutes, or until fluffy. Cool.


1 teaspoon cinnamon

1/2 teaspoon allspice

1 teaspoon maple syrup (or honey or 10 drops of stevia)

1/2 cup shredded unsweetened coconut

1/2 cup slivered almonds

Mix all together and store in a covered container in the fridge.

Heat 1/2 cup until hot (on low) together with a teaspoon of water so it doesn’t burn. Or heat it in the microwave. Top with crushed flax, hemp hearts, optional fruit & milk.

By filling up on this healthy breakfast we aren’t eating as many carbs!
