SPROUTED SEED WAFFLES/PANCAKES

For lunch today I am making pancakes/waffles. I like waffles and Melvin likes pancakes so we are both happy. The following recipe made 6 pancakes and two thick Belgium waffles.

I thawed blueberries and strawberry and mixed in a few drops of stevia to put on top.

SPROUTED SEED WAFFLES/PANCAKES

1 1/2 cups coconut yogurt (The recipe is in the EAT MORE WHOLE GRAINS cookbook update)
2 eggs
1/2 cup alfalfa spouts
2 tablespoons avocado oil
Put the above ingredients into a blender and process for 3 minutes.

1 1/4 cups gluten free flour (I used 1 cup quinoa flour & 1/4 cup cassava flour)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon Himalayan salt
Add the above ingredients to the blender and process until mixed.

Fry in a fry pan in coconut oil or bake in a waffle iron.

Enjoy with fruit on top!
