STRAWBERRIES IN THE FREEZER

When I opened the freezer the other morning the first thing I saw was strawberries.

Last week I had baked an extra pie shell so I decided to use some frozen berries by thickening them and turning them into a pie for dessert. We haven’t had a strawberry pie since summer so that would make dessert for supper special.

Life gets quite boring during these days of covid so I am trying to

make our life a bit more exciting by preparing delicious yet healthy

desserts or snacks even if it’s just for the 2 of us.

STRAWBERRY PIE

1- 9 inch baked pie crust

600 grams frozen strawberries

1/2 cup strawberry Jello powder

2 tablespoons cornstarch

1 tablespoon coconut oil

Partially thaw the strawberries and then slice them. Let them thaw completely and drain the juice out. If there isn’t 1 cup, just fill the remainder with water.

Bring the juice to a boil, remove from the stove and dissolve the strawberry Jello powder in.

Add the sliced strawberries and put into the fridge until it is not quite stiff. Before it is stiff, stir and pour into the pie shell. Refrigerate until stiff. Top with 1 cup whipped topping of your choice.

DESSERTS

We froze a variety of fruits during the summer months, so I try to serve them for dessert at lunch time or supper. I will thaw a cup of berries, add a cut up banana and either 2 tablespoons of apple sauce or 2 tablespoons of yogurt. Enjoy!

YOHANA ICE CREAM

I bought a Yohana machine that makes ice cream out of pieces of frozen bananas and or pieces of other frozen fruits. It tastes great and is a very economical ice cream plus a great way to use up bananas when they are ripe & start getting brown. WINNIE
