VEGETABLE PIZZA
– makes one large 14 by 20 inch pizza or 2 smaller 12 inch pizza crusts
bake on parchment paper or grease the pan
I have heard so much about using cauliflower in the pizza crust so today I decided to experiment.
It took me over 2 hours as I had to weigh, add, measure and write the numbers down.
800 grams of cauliflower pieces
wash and break off 800 grams of flowers from the head. Shred these on a fine grater. Micro wave them for 5 minutes in the microwave oven. Drain in a sieve or cloth. I took off & threw out 1 cup of liquid. Let caulifower cool somewhat.
Add:
3 eggs
8 ounces mozzarella cheese, finely grated
2 teaspoon baking powder
1 tablespoon quinoa flour
Mix this until well combined.
Spread this on your pan and smooth out. Bake for 20 minutes at 400 º F or until lightly browned.
1 1/4 cups pizza sauce
2 cloves garlic, minced
1 teaspoon oregano
1 teaspoon Italian Seasoning
Mix the sauce with garlic and seasonings and spread over the crust.
Cover the sauce with your choice of topping.
1 medium onion
chopped peppers
mushrooms
roasted chicken pieces
slices of pepperoni
Spread 2 cups shredded cheddar cheese over the toppings. Bake at 425 ° F for 20 – 30 minutes or until the cheese is nicely browned.
