HEALTHY GINGER SNAPS
I am so thankful “FOR MY BOSCH”!
Last winter a good friend of ours was telling us what they often do for activities when traveling with their grandchildren. She will say, “What are you thankful for?” and they will take turns sharing something.
This morning I was thinking about what I was thankful for. So many things come to mind; my Heavenly Father, the harvest of crops and the garden produce, the sunshine, the country we live in, our family and so much more.
Butas I reflected on what I had accomplished these past 2 days, I was so very thankful for my Bosch Universal dough kneading machine. I ran out of brown buns last night and in just a few hours from start to finish I had 8 dozen fresh buns cooling on the counter.(page 43 in EAT MORE WHOLE GRAINS) Once the last ingredients were added to the bowl, the third arm on the dough hook of my Bosch, kneaded the dough in just 9 minutes and the dough was ready to shape into buns.
I was making the men hamburgers for lunch on the field today. I put 3 pounds of thawed beef burger, chopped onion, egg and the bread crumbs into the Bosch bowl. The dough hook mixed the beef and in 2 minutes, I could scoop out portions and make patties. Again, so easy on my hands and so quick!
The only thing that was missing was a good cookbook, so I took care of that. I shared each and every recipe in “EAT MORE WHOLE GRAINS” cookbook. I wanted everyone to know how very easy it is to bake with yeast and as well how very delicious and nutritious their own baking can be.
This cookbook recipes have instructions for mixing the dough by hand and as well for using the Bosch.
When I started to pack all 6 lunches for the crew harvesting on our field today, I realized I was out of cookies.
I turned to page 100 in EAT MORE WHOLE GRAINS and whipped up 6 dozen cookies in no time at all.
Because we are trying to use less sugar these days, I cut the amount to 1/2 cup. But as well I now use palm sugar instead of white as it is low glycemic and a better choice nutritionally for diabetics as well as for all of us.
We now use more spelt flour instead of other flours so I did that with this recipe as well.
The men & our grand kids are really enjoying the cookies this way so I want to share the recipe with you.
HEALTHY GINGER SNAPS – 6 dozen
1 cup butter
1/2 cup palm sugar
1 tablespoon black strap molasses
2 tablespoons honey
2 teaspoon baking powder
1/4 teaspoon cloves
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon vanilla
4 cups spelt flour
1/2 cup crushed flax
2 cups sunflower seeds
Put all of these ingredients into the Bosch bowl and knead it a few minutes with the dough hook until it is mixed thoroughly. Shape into small balls, place on a greased cookie sheet and bake 10 – 12 minutes.
