FOOLING THE FAMILY TO EATING HEALTHIER

Because of the new restrictions this past week due to covid we were at home yesterday watching our church service on T.V. in the living room.

Technology provides us with so much that even though we couldn’t get together, we still didn’t feel quite so alone; even though we were just the two of us.

SEEDING TIME

The men finished seeding the wheat and oats fields yesterday. They will wait a week to seed the other crops and I too will get the rest of the garden in. It is very dry this spring so we were blessed yesterday when the clouds overhead provided a quarter inch of gentle rain. I see that the spinach and lettuce are up in my garden so in a few weeks we will again be enjoying the greens.

FOOLING MY FAMILY

Over the past few years I have been making pancakes or waffles using whole grains and usually gluten free. The results were quite brown because of the grains or the use of honey instead of sugar. Melvin has been asking me for Aunt Jemima pancakes but i refuse to buy mixes; not knowing the nutrition or lack of nutrition of each of the ingredients in a mix.

Yesterday I asked myself, “What should I make for Sunday lunch?” I wanted it to be something we would both enjoy. So I took out a simple white flour pancakes recipe, changed ingredients so they would be nutritious but still look white in color. They were a hit and I knew better than to explain how very nutritious they were.

They are very healthy & still a gluten free recipe so I wanted others of you who may be faced with a family member or two who say they don’t like brown pancakes, or brown bread/buns. See if they can be fooled into enjoying these as much as we did.
