“Elaine began by sharing a bit of her farm history with the audience, her vast experiences in introducing flax and soybeans to the market, developing recipes, and honing in on techniques of processing many pulses and grains. She spoke of her choice to be self sufficient in food sourcing by gardening and preserving food; how this has saved money and ultimately created healthy, delicious and affordable food for her family. Elaine shared her experiences of working with flax, soy and grains, and how this process taught her a lot about biochemistry through experimentation. She uses fermenting agents to break down the phytic acid and explained how the health benefits of foods we eat can be lost, sharing her opinion that “healthy food can be medicine”. The participants were treated to a sampling of recipes that use flax and soy, followed by further discussion.”
